Recipe: Teriyaki Turkey Meatballs

Background of Dish: I found this recipe online somewhere and made small modifications along the way. It's my go-to dish if I have friends coming over, or in the covid-era I end up making it once every couple weeks!

Ingredients
Meatballs:
- 1 Pound - Ground turkey
- 1 Egg
- 1 Cup - Crushed saltines or breadcrumbs
- 1/2 Cup - Milk
- 1 tsp - Garlic, grated or minced
- 2 tsp - Fresh Ginger, grated or shredded
- 1 Tbsp - Soy sauce
- 1 tsp - Salt
- 1 tsp - Pepper
- 1 Tbsp - Oil
Glaze
- 1/2 Cup - Soy sauce
- 1/2 Tbsp - Sesame oil
- 1 Tbsp - Rice vinegar
- 1/2 Tbsp - Sriracha
- 1/2 Cup - Brown sugar
- 2 tsp - Garlic, minced
- 2 tsp - Fresh Ginger, grated or shredded
Instructions
1. In a large bowl, combine the crushed saltines (or breadcrumbs) with milk and smush them together real good. Follow that up by adding all of the other meatball ingredients into the bowl.
2. Using your hands, mix well until everything is well incorporated. It's time to make meatballs! I like to scoop up the meatball mixture using a 1/4 cup measuring cup, and roll that into two smaller meatballs.
3. Heat a skillet over medium flame. Add the oil and tilt the skillet to coat. Add the meatballs. Set a timer for 5 minutes.
4. While the meatball is cooking, add all of the glaze ingredients into a small sauce pan. Put it on low heat and keep an eye on it because the sugar can burn.
5. When the 5 minutes are up, flip the meatballs to brown the other side. Set a timer for another 5 minutes.
6. When those 5 minutes are up, pour the glaze into the skillet, lower the heat to medium-low, and set the timer for another 5 minutes. Make sure all the meatballs get a nice coat of the glaze.
7. When THOSE 5 minutes are up, it's time to eat! Serve on top of rice, maybe sprinkle on some chopped scallions for fun.
